Steam rises at eleven, every single day.
No freezer, no menu app, no delivery bag. Just a counter, a stack of bamboo lids and a queue that moves fast because the momos never sit around waiting for you — you wait for them.
01
Dough
Wheat and water, worked by hand until it turns smooth and stops springing back.
02
Filling
Minced meat or paneer, ginger, garlic and timur pepper, mixed cold so the fat stays firm.
03
Pleat
Twelve to fourteen folds by hand — every basket pleated by the same two aunties.
04
Steam
Eight minutes over rolling water in stacked bamboo, lid on, never peeked at.
Every basket comes with all three. Nobody has ever ordered just one.
Sesame–Timur Achar
Toasted sesame, mustard oil and a whisper of timur pepper.
Tomato–Golbheda Achar
Charred tomato, garlic and dried chili, pounded on stone.
Green Chili–Garlic Achar
Raw green chili and garlic, ground fresh every morning.
